We also have Intel VMs running macOS Sequoia for long-term usage. It is much cheaper than the Mac minis and offer a great price to performance ratio for $35/month. (offering volume discounts as well)
The default OS is macOS Sequoia while the default OS for M2 Pro Macs are macOS Sonoma. You may request for a custom macOS version but it will extend delivery time by two hours.
